He got into this the normal way: years of weekend smoking, a few too many local cook-offs, and a habit of tinkering with fire and fuel until it turned into a full-time job. Marcus doesn't trust a smoker until it's run a real 12-hour brisket, held temperature through a cold snap, and burned through a full hopper or bag of charcoal doing it.
